Recept za bosanski burek s mesom – bolje od ovoga ne može

Burek ima bogatu i složenu istoriju koja seže unazad više vekova. Njegovo poreklo se najčešće povezuje s osmanskom kuhinjom, ali jelo ima i razne regionalne varijacije širom Balkana i Bliskog Istoka.

Burek se verovatno razvio iz jela poznatog kao „börek“ u Turskoj, koje je deo osmanske kulinarske tradicije. Turska verzija često koristi različite vrste fila, uključujući sir, povrće ili meso, a kada su Osmanlije osvojile Balkan, jelo se brzo proširilo i prilagodilo lokalnim ukusima. U različitim zemljama, poput Bosne i Hercegovine, Srbije, Crne Gore i Makedonije, burek je postao omiljeno jelo sa svojim specifičnim varijacijama.

U Bosni se često pravi sa mesom, dok se u drugim delovima Balkana može koristiti i sir ili krompir kao fil. Na primer, u Makedoniji je popularan „makedonski burek“, dok u Srbiji obožavamo burek sa sirom.

Ali važno je napomenuti da burek nije samo jelo. On nosi simboličko značenje u mnogim kulturama, često se priprema za posebne prilike ili porodične okupljanja. Postao je deo identiteta mnogih naroda na Balkanu, a takođe se poslužuje i u restoranima i brzim restoranima širom regiona.

A evo kako se pravi bosanski burek prema originalnom receptu.

Sastojci za bosanski burek s mesom:

Za testo:

500 g brašna

250 ml vode

1 kašičica soli

2 kašike ulja

Za fil:

500 g mlevenog mesa (govedina ili mešavina govedine i jagnjetine)

2 glavice crnog luka

3-4 kašike ulja ili maslaca

So i biber po ukusu

100 ml vode (po potrebi)

1 pakovanje gotovih kora (opcionalno, ako želiš olakšati proces)

U velikoj posudi pomešaj brašno i so. Postepeno dodaj vodu i ulje, mešajući dok ne dobiješ glatko testo. Testo oblikuj u kuglu, pokrij krpom i ostavi da odmara 30 minuta.

Na srednje jakoj vatri zagrij ulje u tiganju. Dodaj sitno seckan crni luk i prži dok ne dobije zlatno smeđu boju.

U tiganj dodaj mleveno meso, posoli i pobiberi po ukusu. Prži dok meso ne bude dobro pečeno, uz povremeno mešanje. Ako je smesa suva, dodaj malo vode i kuvaj još nekoliko minuta dok se ne sjedini. Pusti da se ohladi.

Podeli testo na 4-5 manjih kuglica. Svaku kuglicu razvuci što tanje (možeš koristiti oklagiju ili prste). Ako koristiš gotove kore, preskoči ovaj korak.

Na razvučeno testo stavi fil od mesa i luka. Rolaj testo u obliku puža ili ga savijaj u trouglove.

Na dno pleha stavi malo ulja ili maslaca, pa poređaj burek. Prelij ostatak ulja po vrhu.

Zagrej rernu na 200°C. Peci burek 30-40 minuta, dok ne dobije zlatnu boju.

Posluži vruć, uz jogurt ili kiselo mleko.
